Nutmeg

Nutmeg is the seed of a tropical evergreen tree (Myristica fragrans), warm and sweetly aromatic with a faint peppery bite. The same fruit also yields mace — the lacy red membrane surrounding the seed — giving two related but distinct spices from a single harvest.

Where It Comes From

Nutmeg trees require a truly tropical climate and take up to eight or nine years before bearing their first fruit, making them entirely impractical for home gardens outside the tropics. Nearly all nutmeg encountered in home kitchens is a purchased whole seed or ground powder rather than something grown at home.

Culinary Uses

A small amount of freshly grated nutmeg adds warmth to béchamel sauce, eggnog, spinach dishes, and baked goods, its flavor considerably brighter and more complex than pre-ground nutmeg. It's a potent spice best used sparingly — a few passes over a microplane grater is usually plenty for an entire dish.

QUICK TIP

Whole nutmeg seeds keep their flavor for years when stored in a sealed container, far longer than pre-ground nutmeg, which fades within months.
